Finish with lemon juice and chopped coriander. Set aside.

Step-by-Step Instructions

1
Prepare the Aloo Masala: Heat 2 tbsp oil in a pan, add mustard seeds, chana dal, and urad dal. Sauté for a minute, then add chopped ginger, green chillies, and curry leaves. Add sliced onions and cook until translucent. Stir in turmeric powder, hing, and salt. Add boiled mashed potatoes and 50 ml water, mashing lightly while cooking for 2-3 minutes. Finish with lemon juice and chopped coriander. Set aside.
2
Prepare the Mysore Masala: Heat 1 tbsp oil in a pan. Add chopped onions, tomatoes, capsicum, grated beetroot, red chilli paste, red chilli powder, and salt. Sauté for 1-2 minutes. Pour in 100 ml water and mix in 1/2 cup of the prepared aloo masala. Mash everything thoroughly using a potato masher and cook on medium flame for 8-10 minutes until thick and aromatic. Finish with fresh coriander.
3
Make the Coconut Chutney: In a blender, combine grated coconut, ginger, garlic, shallot/onion, green chillies, and salt with a splash of water to form a semi-coarse paste. For tempering, heat 1 tbsp oil, splutter mustard seeds, urad dal, dried red chillies, and curry leaves. Pour the tadka over the chutney and mix well.
4
Cook and Assemble Dosa: Heat a tawa or cast-iron griddle, grease lightly, and sprinkle water to regulate the temperature. Wipe clean and pour a ladleful of fermented dosa batter, spreading it thinly in circular motions. Dot generously with butter and let the dosa begin to crisp.
5
Finish and Serve: Spread 2-3 tablespoons of the Mysore masala evenly all over the surface of the cooking dosa. Cook on medium-high heat until the edges release and the bottom turns golden-brown and crispy. Roll or fold the dosa and serve piping hot alongside prepared coconut chutney.

Chef's Secrets & Pro Cooking Tips

Professional culinary techniques for restaurant-quality Mysore Masala Dosa at home

1

Bloom Spices in Warm Fat

Whole spices (cumin, cardamom, cloves, cinnamon) release their fat-soluble flavor compounds only when bloomed in hot ghee or mustard oil before wet ingredients are introduced.

2

Balance Acid, Fat & Heat

If the gravy feels heavy or flat, a splash of lemon juice or a pinch of amchur (dry mango powder) brightens the entire profile instantly.

3

Deglaze the Pan (Fond Retention)

Scrape the caramelized browned bits sticking to the bottom of your kadai using a splash of warm water. That fond contains the most concentrated umami flavor.
